What if I have a food allergy?

Simply let me know, and I will remove any ingredient you are allergic to, as well as prepare your meals separately! (As a side note, NONE of my creations include peanuts or peanut oil)

Do you provide catering style "family sized" trays for larger gatherings or events?

YES! We will provide tray sized meals by special request. Feel free to email your request with details to Food@PiccolinesTable.com. Please include your idea of serving sizes, meal requests, and any other pertinent details, and we will be sure to let you know if and how we can accommodate!

Can I make a special request to alter or edit a meal?

YES! As someone who has very specific dietary restrictions and "troubles," I understand more than most the need to avoid certain foods or ingredients at times! Please let me know if there is an ingredient or side that you would prefer to avoid, and we can certainly find a substitution!

FRESH PASTA FAQs

Fresh Pasta can be refrigerated, dried, or frozen for future use!

The storage method you choose depends entirely on WHEN you plan on using your fresh pasta!

Homemade pasta has a shorter shelf life than commercially dried pastas:

-Refrigerated: 1 day

-Dried: 2-5 months

-Frozen: up to 8 months

I primarily offer you the options of dried, or frozen pasta. I personally feel that 'refrigerated' pasta (pasta that is hand rolled, cut, then placed right into the refrigerator) should really be used SAME DAY, or at most, the next day.

If not, it can take on an unpleasant consistency, and the humidity may alter it's flavor, texture, or encourage the growth of bacteria!

My dried pasta is STILL fresh off the rolling table!! It just simply means that after I cut the pasta, I toss it lightly with flour and allow it to air dry a bit, removing the moisture.

If you're planning on using fresh pasta within a few weeks or so, this may be the best choice for you! Dried pasta does not need to be refrigerated, and can be stored on a shelf in an airtight container in a dry area that is not exposed to extreme temperatures.

If you wish to keep your pasta fresh for several months, or you're unsure when you will use it, it's nice to opt for the frozen method. After this pasta is rolled and cut, it goes RIGHT into the freezer to retain it's shape, moisture, flavor and freshness, and this is how it's delivered!

WHEN COOKING FROZEN PASTA: take the pasta directly from the freezer, and add it frozen to a pot of salted boiling water. It is NOT recommended that you thaw uncooked pasta first, as it can severely affect the texture or outcome.

-1/4 lb of fresh, uncooked pasta makes apprx 2 cups of cooked fresh pasta (2 portions)

-1/2 lb of fresh, uncooked pasta makes apprx 4 cups of cooked fresh pasta (4 portions)

-1 lb of fresh, uncooked pasta makes apprx 8 cups of cooked, fresh pasta (8 portions)
